Protein Panna Cotta. Have you ever made one? It's kind of like my Protein Flan (and my Protein Blancmange) but, because it's made with casein, it's a lot creamier, a lot denser, a lot thicker, a lot more... intense. Try it! Try it because you're going to love it - it's super low-carb, ridiculously easy, quick to make, and mmmm... it's one hell of a way to say good night to your tastebuds before you crawl into the arms of Morpheus ;-)
1 pint of whole milk
2 scoops of vanilla casein
1 packet of powdered gelatin (11g each)

Step 1: Heat your milk in a pot and, before it boils, remove it from the heat (you want it to be HOT but not HOT enough to make you scream in agony as you dip a finger in to gauge its temperature).
Step 2: Add the milk to a bowl containing your casein and gelatin.
Step 3: Grab a whisker and whisk as if your life depended on it (because you don't want any 'chunks' in your panna cotta, you want it smooth and creamy so... just keep on whisking).
Step 4: Divide the mixture into four ramekins, bowls, mugs, or whatever and stick it the fridge overnight or for several hours.
Step 5: Remove it from the fridge and be ready to flip out as you dig into pure deliciousness! Topped with berries = ka...POW!!!
