A Dark Chocolate Protein Cookies Recipe

With that out of the way, let's talk cookies - protein cookies - because who doesn't love a good homemade cookie? Soft in the center? Crunchy on the outside? Dunked in a glass of milk to slightly soften? Taken out of the milk seconds before total collapse? Oh, yes! I have this Santa-Clausian love for cookies. Unlike Claus though, my passion for cookies revolves around the protein kind. That's why I've uploaded lots of protein cookie recipes on this blog (see them all here). Of those twelve, my favorite have been the Protein Oreos, the Dark Chocolate & Macadamia Nut Protein Cookies, the Barlotti Hemp cookies and THESE :-D

Ingredients - blended together and baked at 170 C (332 F) on a mini cake tray! (I use a silicone one, this one) so as to make sure they all ended nice and round (good idea, no?) but, if you don't have one, you can bake these at the bottom of some muffin trays or just embrace irregularity and bake them on a cookie tray:

1/2 cup (78g) of chocolate hemp protein powder
1 cup (250g) of liquid egg whites
1/4 cup (47g) of coconut flour 1/8 cup (16g) of cocoa powder
1/4 cup (34g) of pea protein
1 and 1/4 cup (191ml) of milk
1 tsp of toffee flavdrops (optional but booming)

First thing I must mention is that the batter was AMAZING! It made me find myself in the middle of the kitchen licking the bowl while nommmmming like some kind of mistakenly-discharged lunatic. It just made me realize that, unbaked, the mix above would make one hell of a delicious chocolate pudding-type-thing! So tasty... but I baked it, baked it into equally delicious dark-chocolatey cookies :-) The secret here is NOT to overbake them. When they're in the oven, test them after 15-20 minutes -you want them soft in the center and almost crunchy on the outside. Oy, oy, oy.... dunked in a some good old fashioned cow's? mmmmm! This is what protein cookie(ng) is all about, woop woop deroop :-D

Macros per one cookie (out of the nine you get from the mix above): 95.3kcals, 11.2g protein, 4g carbs (1.4g sugars), 2.9g fat (1.3g sat) and 3.8g fiber!

  1. I live in Bolivia, and there's no stuff like: "hemp protein powder", "coconut flour", "pea protein". I really would like to know what could i use as a substitute...

    1. For coconut flour use ground almonds or a combination of ground almonds and oat flour (so ground up oats). For pea protein use casein and same with hemp. There's a list I made for this, search for 'protein powder substitution' or 'ingredient substitutions'
